Harvest Meatloaf

Serves 8

• 2 lb ground beef
• 1 ½ c yellow onions, chopped
• 1 c quick-cooking rolled oats or breadcrumbs
• 2/3 c catsup
• 1 T Worcestershire sauce
• 2/3 c parsley, minced
• 3 T garlic, minced
• 3 large eggs, beaten
• 2 t ground cumin
• 1 T chili powder
• 1 t thyme
• 1 t oregano
• 1 t Kosher salt
• ½ t freshly ground black pepper

Preheat oven to 350F. Lightly oil a loaf pan. Mix together all ingredients in a large bowl and knead by hand just until mixed. Shape into a loaf and place in pan. Bake until firm to the touch, about 1 to 1 ¼ hours. Remove from oven and let stand about 15 minutes before slicing.

Serve with buttermilk mashed potatoes and French Rabbit Merlot.
